How to Make Restaurant Style Chole Bhature at Home?

If you are Indian, you must have tasted Chole Bature. In some parts of India, this dish is also called Channa Bhatura or Chhole Bhature. In this dish, Channa or Chole or Chhole are the same and main lead hero and here in the USA, you might call it Chickpeas Curry.

In India, this curry often makes part of a variety of dishes be it Morning breakfast like Chole Bhature or evening snacks Aloo Tikki as spreads or serving as sides with Samosa or Kachori. If you have been to India especially North India you must have seen so many restaurants or stalls selling this, overcrowded. This is one of the loving dishes in India. And if once have tasted you will definitely crave for more.

Recipe for Chole Bhature

Course: Breakfast

Cook Time: 25 minutes

Servings: 3 Persons

Ingredients required for Chole or Channa Curry or Chhole

Chickpeas: 3/4 Cup

Onion: 2 Pods

Tomato: 3 Nos

Ginger Garlic Paste: 1 Tablespoon

Red-chilli Powder: 1 Tablespoon

Cardamom: 2-3 Pods

Black Pepper: 4-5

Bay leaves: 2 Leaves

Cinnamon sticks: 2 Sticks

Tea Bags for color: 2

Salt for Taste

Water as Needed

Ingredients required for Chole Masala

Oil: 1 Tablespoon

Cloves: 3-4 Cloves

Cinnamon: 1 Small Piece

Chole Masala: 3 Teaspoon

Ingredients required for Garnishing

Ghee: 2 Teaspoon

Ginger: 1 Ginger diced Juiliens

A pint of Grama Masala

Fenugreek Leaves: 1/2 Tablespoon

Ingredients required for Bhature

All-purpose Flour/Maida: 2 Cups

Milk: 1/4 Cup

Curd: 1/2 Cup

Cooking Soda: 1 Pinch

Salt: 3/4 Teaspoon

Oil: 1 and 1/2 Tablespoon

Instructions for Chole Preparation

  1. Soak the Chole (Chickpeas) in water overnight. Drain water in the morning.
  2. In a pressure cooker add Chickpeas, 2 bags of Tea, Cardamom, Powder, Salt, and 4-5 cups of water. Till 2 whistles cook at high flames, then turn the flame to medium and keep them to cook for another 15 minutes.
  3. While the Chole cooks, take a pan to prepare Chole Masala. Add 1 tablespoon of Oil keep it till it heats up. Add grated Onion and some Cloves. Fry till the onion become light brown and the smell of Raw Onion is gone and add Ginger-Garlic paste and fry till the smell goes off.
  4. Add the diced tomatoes in small pieces, stir and let it cook for 15 minutes on medium flame. Cover the pan.
  5. Once the Tomatoes meltdown, add Red Chili Powder, Cumin Powder, Chole Masala, Salt, and mix for 2 minutes.
  6. Put the cooked Chole in and mix well till all Chole mixed and coated with masala and spices, for 2 minutes.
  7. Pour in the Chole water and cover the pan and let it cook at the medium-low flame for about 30 minutes. Gravy will start to thick after 30 minutes so keep adding water to avoid it thickening.
  8. Take a pan and add 1 teaspoon of ghee and then add ginger julienne and fry till it became golden brown and mix it with the prepared Chole.
  9. Garnish the curry with some finely chopped Coriander leaves and sprinkle some Garam Masala.

Instructions for Bhature Preparation

  1. Take a large bowl, add all-purpose flour, add salt (for taste), cooking soda, and some oil to the flour and mix all the ingredients well.
  2. Start kneading the Dough and add Curd and Milk after few minutes regularly. If required, add some more milk to knead the dough well. Knead it till it becomes soft and pliable.
  3. Keep the dough fully covered with a Cloth for around 3 hours. This will make puff the dough.
  4. Take some dough in hand and make small balls and repeat the process till all the dough vanished.
  5. Before start rolling the balls, grease the rolling surface of your rolling board well.
  6. Put the Rolls on the board and press to make a circle. Sprinkle few drops of Oils over the circle. Roll the balls upside down to make them into oval shapes.
  7. Take a deep frying Pan and fill it up 2/3 with Oil and heat Oil till it reaches 350 degrees Fahrenheit. Make sure both sides are cooked evenly.

Serve: Serve two hot Bhaturas with tasty Chole/Channa.

This lip-licking Chole Bhatura is often eaten with raw onion rings. It will be topped with some Carrot Pickle.
